Ingredients for 4 servings:

  • 1 cup bulgur
  • 2 cups water
  • 2 tsp chicken broth
  • 2 tsp oil (pizza oil or chili oil)
  • 2 shallots
  • 2 spring onions
  • 1 bell pepper(s)
  • 2 tomatoes, ripe
  • ½ cucumber(s)
  • flat-leaf parsley
  • Mint, fresh, alternatively peppermint tea
  • Spice(s) (leaf pepper)
  • 1 lemon(s)
  • 1 tbsp olive oil

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Combine the bulgur with the pizza oil, chicken broth, bell peppers, and mint leaves. Pour boiling water over the bulgur and let it swell. Meanwhile, finely chop the onions, bell peppers, and cucumber (removing the seeds and core). Then combine with the bulgur, oil, and lemon juice and let it steep. Remove the mint leaves, season with salt and pepper, and serve with chopped parsley.
