Bulgur salad with arugula and feta cheese

Ingredients for 2 servings:

  • 100 g bulgur, (7 minutes cooking time)
  • 1 small carrot(s)
  • ¼ cucumber(s)
  • 5 cocktail tomatoes
  • 50 g arugula
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • some salt and pepper
  • ¼ tsp red pepper flakes or chili powder
  • 100 g sheep’s cheese

Instructions

Working time approx. 15 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Wash the bulgur thoroughly and cook as directed on the package. Peel the carrot and cucumber. Then dice finely. Wash and halve the tomatoes. Wash the arugula, spin dry, and roughly chop. Mix the lemon juice and olive oil. Season with salt/pepper and paprika flakes. Gently mix the bulgur, diced vegetables, arugula, and the dressing. Let stand for 15 minutes. Sprinkle the crumbled feta cheese over the top and serve.
