Ingredients for 4 servings:
- 125 g bulgur
- Salt
- 1 chili pepper(s)
- 1 garlic clove(s)
- 3 shallots
- 1 tbsp clarified butter
- 100 g lentils, red
- 2 limes, squeezed
- 125 ml broth
- 85 g pistachio kernels
- ½ pot of mint
- pepper
- Sugar
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Wash and drain the bulgur. Boil the bulgur in 375 ml of water, season with salt, and let it swell in an uncovered pot over low heat for about seven minutes. Let it cool. Finely slice the chili pepper. Peel and chop the garlic clove and shallots. Heat the clarified butter. Sauté the chili, garlic, shallots, and lentils, then deglaze with lime juice and stock. Bring to a boil and simmer for 8-10 minutes. Chop the pistachios and mint. Combine the ingredients and arrange in glasses.
