Burger with apple mustard sauce and caramelized sauerkraut

Ingredients for 4 servings:

  • 750 g minced beef
  • 50 g sugar
  • 200 g sauerkraut, raw
  • 1 dl apple juice
  • 4 slices of Appenzeller
  • 4 burger buns
  • 30 g fried onions
  • 8 slices of bacon
  • ¼ apple
  • 50 g crème fraîche
  • 1 tsp mustard
  • 1 tsp honey
  • 1 sprig(s) of thyme
  • 1 dashes lemon juice
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Knead the minced meat and form 4 patties. Set aside. Put the sugar in a saucepan and let it melt. As soon as it turns brown, add the sauerkraut and gradually stir in the apple juice. Simmer for about 10 minutes. Fry the patties, adding a little salt. Finally, place the cheese slices on top and let them melt over medium heat. Cut the buns in half and briefly fry them in the frying pan. For the sauce, peel and core the apple, and cut it into very fine pieces. Mix the crème fraîche with the mustard and honey, then add the apple and thyme leaves. Season to taste with salt, pepper, and lemon juice. Place the patties on the bread halves, top with sauerkraut, fried onions, bacon, and the sauce. Put the lids on the buns and serve.
