Butter dumplings

Ingredients for 1 servings:

  • 80 g butter, lukewarm
  • 2 egg yolks
  • 2 egg whites
  • 40 g flour
  • 40 g white bread, dry, crust removed, grated
  • Salt
  • Nutmeg, grated
  • e.g. water, salted (or beef broth)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Soup garnish

Cream lukewarm butter until fluffy, add the egg yolks, and continue stirring. Stir in the flour and breadcrumbs. Beat the egg whites until stiff peaks form and fold into the mixture. Season and let stand for 20 minutes. Bring plenty of salted water or beef broth to a boil. Using a wet soup spoon and the palm of your hand, form dumplings. Boil gently and then serve in the soup. My tip: Butter dumplings taste even more sophisticated if you add chervil, basil, parsley, mixed herbs, or diced ham to the mixture.
