Buttermilk potato soup

Ingredients for 4 servings:

  • 2 cups of buttermilk, 500 ml each
  • 1 piece(s) smoked bacon
  • 750 g potatoes
  • 1 meat sausage or poultry sausage
  • 1 small onion(s)
  • 1 tbsp flour
  • salt and pepper
  • n. B. water

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the potatoes into fairly small pieces and bring to a boil in a little salted water. Dice the bacon and fry until well browned. Chop the onion into small pieces and add it. Continue frying until the onions are nicely browned. When the potatoes are very soft, drain off enough water so that the potatoes are no longer covered. Mix the flour with a little cold water to make a roux and add directly to the potatoes or water. Then pour in the buttermilk and bring everything to a boil. Add the bacon and onions, then add the chopped sausage and bring everything to a boil again, seasoning with salt and pepper if desired. Tip: Add the buttermilk gradually so you can see how much liquid it will be.
