Cabbage noodles

Ingredients for 4 servings:

  • 300 g tagliatelle, 8 mm
  • 1,000 g white cabbage, cut into strips
  • 100 g bacon
  • 100 g onion(s), finely diced
  • 300 g salami, coarse
  • Herbs (chives, parsley)
  • salt and pepper
  • Caraway powder
  • Paprika powder, sweet
  • Water (salt water)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Fry the bacon and sauté the finely diced onions until translucent. Then add the slightly larger salami cubes and fry them. Reduce the heat slightly so the salami doesn’t burn, but still allows the fat to render out. Add the chopped white cabbage and braise it for about 20 minutes, until it is al dente and has taken on a nice brown color. Season with salt, white pepper, ground caraway, and paprika. In the meantime, cook the pasta in salted water until al dente, season to taste, stir into the braised cabbage, and mix thoroughly. Heat through again and adjust the seasoning if necessary. Sprinkle with the freshly chopped herbs and serve. Tip: Try the cabbage noodles with mixed minced meat instead of the salami cubes. This tastes just as delicious.
