Ingredients for 6 servings:
- 300g penne
- salt and pepper
- 600 g chicken fillet(s)
- 5 tbsp olive oil
- 1 bunch of parsley
- 1 clove(s) garlic
- 1 tbsp mustard
- 4 tbsp red wine vinegar
- 400 g tomatoes
- 150 g romaine lettuce
- 50 g Parmesan, sliced
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
Cook the pasta in boiling salted water according to the package instructions. Wash the meat, pat dry, season with salt and pepper, and fry in 1 tablespoon of oil, stirring occasionally, for about 10 minutes. Peel the garlic and pluck the parsley leaves from the stalks. Finely puree the garlic, parsley leaves, mustard, 4 tablespoons of oil, vinegar, and 4 tablespoons of water. Season to taste with salt and pepper. Dice the tomatoes and cut the lettuce into strips. Mix the pasta, sauce, lettuce, and tomatoes. Slice the meat. Arrange everything in a bowl and sprinkle with Parmesan shavings, if desired.
