Cafe Au Lait Whoopies (makes Approx. 22-24 Pieces)

The perfect cafe au lait whoopies (makes approx. 22-24 pieces) recipe with a picture and simple step-by-step instructions.

For the filling

  • 2 Teaspoon. Baking powder
  • 0,5 Teaspoon. Baking soda
  • 10 g Cocoa powder
  • 60 g Sugar
  • 1 pack Vanilla sugar
  • 1 Egg
  • 70 g Butter
  • 100 ml Caffe latte
  • 50 g Mixed almonds
  • 15 g Food starch
  • 15 g Sugar
  • 130 ml Cafe Latte
  • 20 ml Strong Esspresso
  • 100 g Butter
  • Chocolate and sprinkles or pearls to decorate
  1. Mix the flour, baking powder, baking soda, cocoa, vanilla sugar, sugar and almonds together. Melt the butter, mix the Caffe Late and the egg, add the whole thing to the flour mixture and stir well. Baking mat (I recommend the one shown is from Tchibo, then the whoopies won’t run like this) or set up a baking sheet with baking paper. Spray on circles and bake in a preheated oven (about 170-180) for 10 minutes. Take out and let cool down. Then decorate half with chocolate and pearls.
  2. For the filling: Mix the cornstarch with the sugar and the caffe latte and bring to the boil. Then add the butter and stir until smooth. Attention, both should have the same temperature. Pour into a piping bag and chill (I took this step before the first one).
  3. Then squirt the filling onto the lower half and cover with the decorated half. Feel it!
