Ingredients
 

  • 250 g Butter at room temperature
  • 400 g Sugar
  • 140 g Flour
  • 2 Egg
  • 1 packet Vanilla sugar
  • 2 Chilled egg whites
  • 1 tsp Citric acid
  • 2 tsp Agar-agar
  • 75 ml Condensed milk, sweetened at room temperature
  • Vanilla flavor

Instructions
 

  • First we dissolve the agar-agar in 140ml water and let it swell for a few hours. to the dough we stir 100 grams of butter, 100 grams of sugar, eggs and the vanillin to a smooth mass and then add the flour. We put the dough on a baking sheet, where we have drawn a circle the size of our springform pan on baking paper (it should be 2 pieces). We bake the whole thing at 200 degrees for about 10 minutes.
  • We take the remaining 150 grams of butter and beat it together with the condensed milk to a cream and put it aside (not in the refrigerator). Now we add 300 grams of sugar to our agar-agar, boil the syrup while stirring constantly (it creates a white foam) and remove it from the stove. (let cool down to 80 degrees)
  • Now we beat the egg white to firm egg whites (while we beat we add the citric acid and the vanilla flavor) and slowly add the agar syrup while stirring constantly. Now we give the mass time to cool down so that the butter does not melt when the butter cream is stirred in.
  • Now we put dough in our springform pan, then the egg white mass, then dough again on top of the rest of the protein mass. Decorate as you like and put in the fridge for 4-5 hours.
