  • 250 g butter
  • 150 g sugar
  • 4 m.-sized eggs
  • 500 g flour
  • 1 packet of baking powder
  • 125 ml milk
  • 1 shot of carbonated mineral water
  • some fat for the mold
  • e.g. breadcrumbs for the mold or ground almonds, nuts, almond flakes

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour

Makes 5-6 400ml jars or 10-12 200ml jars. Brush clean jars with oil or fat and sprinkle with breadcrumbs, etc. Place the rubber bands and glass lids or twist-off lids in boiling water. Preheat oven to 180°C (top/bottom heat). Beat butter and sugar for 5 minutes until fluffy. Beat eggs, one at a time, into the mixture for 30 seconds each. Mix flour and baking powder, sift through, and stir in alternately with the milk. Finally, add a splash of sparkling water and beat in. Fill the prepared jars with batter up to 2/3 full. Place jars in the center of the oven and bake for 35-40 minutes. (Do the toothpick test!) Remove the jars from the oven (use thick potholders or oven mitts, they will be very hot) and immediately seal with the prepared rubber bands, lids, and clamps, or twist-off lids. Shelf life is approximately 6 months.
