Ingredients for 1 servings:

  • 2 eggs
  • 125 g sugar
  • 2 tsp vanilla sugar
  • 1 pinch of salt
  • 250 g quark
  • 250 g flour
  • ½ tsp baking powder
  • Fat (frying), e.g. sunflower oil, coconut oil, clarified butter
  • n. B. sugar

Working time approx. 30 minutes; Total time approx. 30 minutes

makes about 20 quark balls

Beat the eggs with the sugar, vanilla sugar, and salt until frothy. Then add the quark and stir until a smooth batter forms. Sift the flour and baking powder and stir into the quark mixture. Then let the batter rest for a while. In the meantime, heat the frying oil in a saucepan or frying pan with high sides to around 170°C. You can test whether the oil is hot enough by dipping a wooden skewer into the oil. If small bubbles rise from it, it is hot enough. Now, using an ice cream scoop or two tablespoons, carefully drop small portions of the batter into the hot oil. Don’t add too many at once, or the oil will cool too quickly and the quark balls won’t crisp up. If necessary, turn the balls in the oil to ensure they brown evenly. When the quark balls are the desired shade of brown, remove them from the hot oil with a slotted spoon, drain them on a paper towel, and let them cool slightly. Roll in sugar if desired and enjoy. Makes about 20 pieces. Tip: Let the frying oil cool, then filter it through a coffee filter or kitchen paper and a sieve. Store it for future frying. Or, once cooled, place it in a plastic bag and dispose of it with the trash.
