Cake: Speculoos Cake with Mulled Wine Cherries
The perfect cake: speculoos cake with mulled wine cherries recipe with a picture and simple step-by-step instructions.
biscuit
- 6 Eggs size L
- 6 tbsp Water hot
- 180 g Extra fine sugar
- 1 packet Vanilla sugar
- 180 g Flour
- 25 g Unsweetened cocoa
- 2 tsp Speculoos seasoning
mulled wine
- 0,75 l Dry red wine
- 1 disc Lemon fresh
- 1 disc Orange fresh
- 1 bag Mulled wine spice
- 3 tbsp Sugar brown
- 1 pinch Ground cardamom
also
- 2 Glass Cherries
- 2 packet Red cake topping
- 800 ml Cream
- 3 Pck. Cream stiffener
- 3 Pck Buorbon vanilla sugar
- 2 Packs Mini cream puffs vanilla
Decoration
- Cinnamon sugar
- Zebra rolls
- Candied cherries
- Preheat the oven to 160 ° C fan oven
- Put the eggs with water in the mixing bowl of the food processor and whip everything for about 1 minute, then slowly pour in sugar and vanilla sugar and continue beating until the whole thing is a thick creamy mass that almost fills the bowl.
- Mix the flour, cocoa and speculoos spice in a bowl. Pour over the egg mixture and carefully fold in with a whisk (DO NOT stir)
- Put the biscuit mixture in a springform pan (28cm) and bake. Normal baking time 25-30 minutes. With my tip, the baking time is extended by about 30 minutes
mulled wine
- Heat the red wine in a saucepan, add the fruit slices and bring to the boil. Then add the mulled wine spices, cover the cardamom and leave to stand on low heat for 10 minutes. Let it get cold.

- Thaw mini-diaper bag. Cut the bottom twice horizontally. Place a cake ring around the bottom
- Drain the cherries in a colander. Cherry juice can be used otherwise
- Cook a cake topping with 500ml mulled wine according to the package instructions. Remove the cherries from the plate and distribute them on the lower base. Let it set, then put the 2nd floor on top.
- Whip the cream until stiff with the cream stabilizer and vanilla sugar and spread the 2. base thinly with it. Put the thawed mini cream puffs on top and smooth the cream on top. Put the last base on top of the cream – smooth it out – remove the cake ring – spread the cream all around. Sprinkle generously with cinnamon sugar on top for decoration. Decorate 16 pieces of cake with candied churches and zebra rolls. For me the cream was unfortunately no longer enough for cream tuffs ….
