Ingredients for 1 servings:
- 3 eggs
- 150 g flour
- 1 bag of baking powder
- 100 ml sunflower oil
- 125 ml milk
- 100 g Gruyère or another spicy cheese
- 100 g raclette cheese or another spicy cheese
- 150 g bacon, streaky or lean ham, smoked
- pepper

Preheat the oven to 180°C (top/bottom heat). Finely dice the bacon or ham. I always buy pre-diced, lean, so-called cured ham. Depending on the consistency, either grate or finely dice the cheese. Mix the eggs, flour, baking powder, and pepper well, then gradually add the oil and the slightly warmed milk, stirring in. Then fold in the cheese and bacon. Pour the mixture into a loaf pan and bake for about 45 minutes. Watch the pan during baking; cover with aluminum foil if it’s getting too brown. Test for doneness with a wooden skewer before removing the pan from the oven and extend the baking time slightly if necessary. The cake is very moist. The recipe comes from a French baking book that I inherited from my aunt.
