Ingredients for 4 servings:

  • 250 g flour
  • 125 g butter, cold
  • 1 pinch of salt
  • 1 egg(s)
  • 1 large onion(s)
  • 1 tbsp butter, softened
  • 450 g Camembert(s), ripe
  • 50 g butter
  • 1 egg(s)
  • Salt
  • black pepper
  • 1 tsp paprika powder, hot
  • Fat for the mold
  • Flour for the work surface

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Flamiche is a specialty from Normandy. The perfect drink to accompany it is cider.

Put the flour in a bowl. Finely dice the butter and add it to the flour along with the salt and egg. Mix everything together to form a smooth dough. Cover and let rest in the refrigerator for 30 minutes. Peel and finely chop the onion. Heat the butter in a pan and sauté the onion until soft. Cut the rind off the Camembert. Crumble the cheese and mash it finely with a fork, mixing in the butter and sautéed onion. Season with salt, pepper, and paprika. Finally, stir in the egg. Preheat the oven to 200°C. Grease a quiche dish. Roll out the dough on a floured surface, place it in the dish, and form a 3 cm high rim. Spread the cheese mixture evenly over the dough and bake in the preheated oven for 25-30 minutes. Serve with a green salad and vinaigrette.
