Can We Freeze Buttercream?

There is also the question of how long buttercream can be stored in the fridge – and whether and how long it can be frozen. The good news: the shelf life of buttercream is very good when refrigerated! Buttercream does not keep well at room temperature, at least a cool room with at least a constant 8° C or lower should be available as a storage location. It will keep in the fridge for up to 5 days. If you freeze buttercream, the shelf life is at least 3 months and at most 6 months. In both cases, it is important to cover or pack the delicious mass airtight, as the buttercream absorbs odors very quickly. In addition, the taste and consistency could change very quickly. In addition, the airtight packaging also protects against freezer burn in the freezer compartment. Basically, it is good to process the buttercream quickly and also to make it ready for storage quickly, especially if the buttercream contains fresh eggs.

Storing and defrosting buttercream: Here’s how

A well-sealed freezer container or freezer bag is ideal. Even buttercream cake can be frozen this way, but the cake has to be cut again after freezing. To process, take the cake or buttercream out of the freezer and let it thaw in the fridge for a few hours. Then whip them up the buttercream again thoroughly. Don’t forget that the buttercream should also be processed quickly after it has been thawed. However, German buttercream with custard should only be kept in the refrigerator for 3-5 days and should not be frozen, as this becomes liquid again when thawed. French buttercream, on the other hand, freezes really well. By the way, you can also shape the sweets and store them in the freezer.

Tips: Freezing the buttercream in small batches also makes it easier to defrost. Freezing ready-made buttercream roses will save you time decorating cakes. To do this, simply pipe the flowers onto a plate lined with parchment paper that would fit in the freezer compartment and pop them straight into the freezer. Once the roses are set, place them in airtight containers. Also possible: Freeze the piping bag with the buttercream.
