Can you put kefir in the freezer?

We don’t recommend putting drinkable kefir in the freezer while in the bottle, as this will cause the liquids and solids to separate. The kefir may lose its creamy consistency once thawed. Instead, we recommend pouring the kefir into an ice cube tray and blending before consuming if you choose to freeze it.

Does freezing kefir ruin it?

Yes, you can freeze kefir smoothies. Kefir can be frozen for up to 3 months. This might seem surprising but the process doesn’t kill off all the healthy bacteria. It puts most of these bacteria into a dormant state and they reawaken when coming back to room temperature.

How long does kefir last in fridge?

Homemade kefir should last for about 2 to 3 weeks if stored properly.

How do you reactivate frozen kefir?

If your grains were frozen, allow them to thaw in the fridge, and then strain, giving them a very small amount of fresh milk and let ferment at room temperature for 24 hours. Watch to see if it kefirs the milk in that time period.

How do you defrost frozen kefir?

Take the grains out of the freezer and let them slowly defrost in the fridge. Once they are not hard any more, place them in cool (fridge cool) new milk and place it somewhere warmer 65-75°F (18-25°C). Let it ferment for 2 days. Discard the first 2-3 batches and then try if it tastes again as you know it.

How long is kefir good for?

Since kefir is a fermented food, treat that date as an indicator of how long the taste of the dairy drink should be optimal. Kefir should retain quality for around two to three weeks or until the date on the label. Once the product passes that date, sooner or later its taste will become too strong.
