You can freeze fresh puff pastry well – even that which has come out of the fridge. It is already rolled up and covered with paper on both sides. This is particularly important as it will prevent the finished puff pastry from sticking together during freezing. Alternatively, you can roll it out and place it between baking paper to achieve the same effect. The same applies if you want to freeze homemade puff pastry.

Freeze and thaw puff pastry
To thaw, first place frozen puff pastry in the refrigerator. There he rests for two to three hours. This gentle thawing improves the consistency and makes processing easier for you at the end.
