Cannelloni soup

Ingredients for 4 servings:

  • 250 g minced beef
  • 1 onion(s), diced
  • 2 garlic cloves, diced
  • Oil for frying
  • 2 bell peppers, red and orange
  • 1 tbsp, heaped tomato paste
  • 2 tsp Bolognese seasoning, or other spices of your choice
  • 500 ml tomatoes, pureed
  • 300 ml water
  • 150 g cannelloni, lasagna sheets or other pasta leftovers
  • ½ cup crème fraîche
  • 4 tbsp, heaped cheese, grated

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Leftovers

Brown the minced meat with the diced onion and garlic in a little oil. Trim the bell peppers, cut them into bite-sized pieces, and add them. Add the tomato paste and sauté briefly. Season to taste with the spice mix or other spices of your choice. Add the passata and water. Simmer for about 10 minutes. Then add the broken cannelloni or lasagna sheets to the soup and simmer on low heat for about 10-13 minutes, then stir in the crème fraîche. Ladle the soup into bowls and serve sprinkled with the cheese.
