Ingredients for 6 servings:
- 1 kg minced meat, mixed
- 1 bunch of spring onions, cut into rings
- 900 ml beef stock or beef broth
- 2 cans of chopped tomatoes, 400 g each
- 500 g medium-sized Penne Rigate (e.g. No. 73 from Barilla)
- 3 tbsp tomato paste
- 4 tbsp extra virgin olive oil
- 3 tsp salt
- 3 tsp sweet paprika powder
- 3 tsp Italian herbs, dried
- 300 g herb cream cheese
- Pepper, freshly ground

In a large pot, brown the ground beef in olive oil. Season with salt, then add the tomato paste to the center and brown. Add all the remaining ingredients except the cream cheese (including the uncooked penne) and simmer gently for 13 minutes, stirring vigorously occasionally. Finally, stir in the cream cheese. Season generously with salt and pepper, and you’re done. Serve with fresh, grated Parmesan cheese and lettuce. Notes: This one-pot pasta is a no-brainer family dish that kids will love, too. The only preparation required is cleaning and chopping the spring onions, so it takes a maximum of five minutes. This batch is enough for four hearty or six normal eaters, and any leftovers will be very popular the next day. This dish is extremely quick to prepare, for example, in the evening after a hard day at work; you only need one large pot and a few ingredients. I’ve adapted Emmi’s brilliant recipe slightly. The taste depends on the quality of the few ingredients. So make sure you use good olive oil, organic mince, high-quality stock, and good tomatoes. San Marzano tomatoes are best, but you have to chop them up a bit beforehand. But I’ve also cooked it the discount store version and still found it delicious.
