Ingredients for 4 servings:
- 250 g cannelloni
- 2 m.-large zucchini
- 1 clove(s) garlic
- 125 g cream cheese or sour cream
- 150 g cheese (e.g. Gouda, Emmental …), grated
- 1 tbsp olive oil
- salt and pepper
- 1 tbsp vegetable broth, instant or Vegeta
- 200 ml cream
- some parsley
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Grate the washed zucchini and place it in a bowl. Add the cream cheese or sour cream, 100g of cheese, salt, pepper, olive oil, crushed garlic clove, parsley, vegetable stock or Vegeta, and mix well. Fill the cannelloni with the zucchini mixture and place in a baking dish. Pour over the whipped cream and sprinkle with the remaining cheese. Bake in the oven at 180°C for approximately 40 minutes.
