Caprese Avocado Breakfast Toast

Ingredients for 4 servings:

  • 150 g cherry tomatoes, halved
  • 150 g mini mozzarella, halved
  • 10 g fresh basil, chopped
  • 1 tbsp olive oil plus 2 tsp for marinating or serving
  • 1 avocado(s), pitted, flesh mashed
  • 4 slices of bread
  • 4 eggs
  • salt and pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 25 minutes; Cooking/baking time approx. 2 minutes; Total time approx. 57 minutes

Combine tomatoes, mozzarella balls, basil, and 1 teaspoon of olive oil in a bowl. Season with salt and pepper. Cover and let stand at room temperature for 25 minutes. Heat 1 tablespoon of olive oil in a pan. Fry the eggs just until the whites are set, 1-2 minutes per side. Toast bread, if desired. Spread some avocado on a piece of bread, top with a fried egg, and 1/4 of the Caprese mixture. Continue this process until all 4 pieces of bread are ready. Drizzle with salt, pepper, and olive oil. Serve immediately.
