Ingredients for 3 servings:
- 5 tomatoes (vine tomatoes)
- 2 mozzarella
- 250 g pasta, e.g. farfalle
- olive oil
- Balsamic vinegar
- some basil, fresh leaves
- salt and pepper
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes
Cook the pasta al dente according to the package instructions. While the pasta is cooking, cut the tomatoes into eighths and place them in a large salad bowl. Once cooked, add the pasta to the salad bowl. Add the olive oil, toss to combine, and season the salad with salt, pepper, and balsamic vinegar. Tear the mozzarella into small pieces, add to the bowl, and mix well. Chop the basil and add it as well, leaving a few leaves for garnish. The salad tastes best when let it sit for about 30 minutes.
