Ute's vegetarian tortellini salad

Ingredients for 6 servings:

  • 2 packs of tortellini with cheese filling
  • salt water
  • 1 cucumber(s)
  • 500 g tomatoes
  • 1 stalk(s) leek
  • 1 jar Miracle Whip Balance
  • some milk
  • some mustard
  • salt and pepper
  • Tabasco

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

great for parties or barbecues

Cook the tortellini in salted water according to the package instructions until al dente. Then drain and let cool. Peel the cucumber and dice it. Wash the tomatoes, remove the stems, and also dice them. Slice the leek into rings and place all the vegetables in a bowl with the tortellini. Add the jar of Miracle Whip (I always use the light version so the salad isn’t so heavy). Add about 1 tablespoon of mustard to taste and mix. If you need more liquid, just add a little milk. Finally, season the salad with salt, pepper, and a few drops of Tabasco. If you prefer meat, you can of course use meat-based tortellini and/or add finely chopped cooked ham.
