Caprese with basil vinaigrette

Ingredients for 2 servings:

  • 1 buffalo mozzarella
  • 2 tomatoes
  • 1 bunch of basil
  • 2 tbsp olive oil
  • some balsamic vinegar, dark
  • some salt and pepper from the mill
  • 2 slices of toast as a side dish

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Tomatoes and mozzarella with a twist

Bring a pot of water to a boil. Cut a cross in the tomatoes and blanch them briefly in hot water. As soon as the skin starts to loosen slightly, remove them immediately and refresh them in cold water. Quarter the tomatoes, remove the cores and finely dice the tomato flesh. Place them in a bowl and season with salt and pepper. Season with balsamic vinegar and a little olive oil. Remove the basil leaves from the stems, place them in a blender and puree with olive oil. Season with salt and pepper. Arrange the diced tomatoes in a circle on a plate. Halve the mozzarella ball and place one half in each diced ring. Then garnish with the basil vinaigrette. Toast the bread and serve immediately with the Caprese.
