Caramelize sugar – that’s how it works

  • Get a heavy-bottomed saucepan and fill it with the sugar you want to caramelize. Always use granulated sugar, the following approach will not work with powdered or raw sugar.
  • Heat the mass slowly, stirring constantly. It is best to use a wooden spoon for this.
  • After a while, you will notice that the sugar liquefies.
  • Be careful not to get the sugar too hot, otherwise, the mixture can easily splatter. You should therefore always caramelize sugar with long-sleeved clothing and gloves. Also, be careful not to burn the sugar. This can happen quickly if you don’t stir enough while melting.
  • As a rule, the darker the sugar mass, the more bitter the taste. So always pay attention to the color of the sugar.
