Ingredients for 1 servings:
- 6 cherry tomatoes
- 1 tbsp powdered sugar
- 1 shot of balsamic vinegar
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 10 minutes
Heat the powdered sugar in a pan until melted. Be careful not to burn it. It’s best to remove the pan from the heat for a moment and then add the cherry tomatoes. Toss the tomatoes well in the pan so that they get the liquid sugar on all sides. Finally, add a small splash of balsamic vinegar and toss well again. The caramelized cherry tomatoes will develop a hard crust as the sugar solidifies again. When you bite into the tomatoes at this point, you’ll have a sweet, crunchy crust, along with the fruity flavor of the tomato and the mild acidity of the balsamic vinegar. Serve on arugula with some shaved Parmesan cheese on top. Caramelized cherry tomatoes make a great side dish. Even in a simple leaf salad, the crunchy tomato adds that special something.
