Ingredients for 2 servings:
- 3 eggs, size M
- 100 ml whipped cream
- 20 g hard cheese, Italian, grated
- 150 g vermicelli
- 125 g raw ham, diced
- 4 tbsp oil
- salt and pepper
- ½ bunch chives

Bring a pot of water to a boil. Meanwhile, combine the eggs, heavy cream, and hard cheese in a bowl and season with salt and pepper. Wash the chives, shake dry, and cut into small rolls. Mix half of them into the egg mixture. Season the boiling water with salt and cook the vermicelli according to the package instructions. Drain well. Brown the ham cubes in a non-stick pan (26 cm diameter) with 4 tablespoons of oil. Add the pasta and cook briefly. Spread everything evenly in the pan and pour the egg mixture over it. Cover and let it set over medium to low heat for about 5 minutes. Slide the omelet onto a board and cut into quarters. Serve sprinkled with the remaining chives. 940 kcal per serving
