Ham noodles with fennel

Ingredients for 2 servings:

  • 200 g pasta, e.g. B. Spaghettini
  • 80 g smoked ham
  • 1 small fennel bulb(s)
  • 2 eggs
  • Salt
  • Paprika powder
  • 20 g butter
  • Breadcrumbs as desired

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Leftovers

Cook the pasta according to the instructions or use leftovers from the day before. Cut the smoked ham into small pieces. Halve the fennel bulb, remove any unsightly leaves, trim the stalk, and cut into fine strips. Melt a little butter in a pan and slowly fry the pasta, ham, and fennel together. Once everything has taken on some color, season with salt and paprika. It will take about 10 minutes for the fennel to soften, depending on how thinly you cut the strips. Now whisk two eggs well, pour them over the pasta, and let them set. If you like, you can brown some breadcrumbs in butter in another pan and then sprinkle them over the ham pasta. The ham pasta tastes great with a little ketchup.
