Caribbean beer meat with dumplings

Ingredients for 6 servings:

  • 1 kg beef
  • 2 tbsp marinade (green seasoning), alternatively chopped spring onion and coriander
  • 1 tbsp oil
  • 2 tbsp sugar
  • 2 onions, chopped
  • 4 clove(s) garlic, chopped
  • ½ liter beer, light
  • 1 tsp soy sauce
  • 1 tsp Worcestershire sauce
  • 2 bay leaves
  • 1 tsp salt
  • ½ bunch basil
  • 1 tsp sauce (pepper sauce), alternatively chopped chili pepper
  • 200 g flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 100 ml milk or water

Cut the beef into roughly 3cm pieces, mix well with the chopped spring onions and cilantro, and let it sit in the refrigerator for one hour. In the Caribbean, people simply use green seasoning, which essentially only contains these two herbs, apart from a little vinegar. Heat the oil in a pan, caramelize the sugar, and fry the meat cubes for 5 minutes, stirring constantly. Now add the chopped onions and garlic and fry for another 5 minutes over low heat. Deglaze with the beer, add the soy sauce, Worcestershire sauce, bay leaves, basil, peppercorn sauce/chopped chili pepper (without seeds), and simmer covered for 20 minutes. Season with salt. For the dumplings, mix the flour, baking powder, and salt and add enough milk or water until the mixture can be easily formed with a spoon. Drop small dumplings from a teaspoon into the hot sauce and simmer, covered, for another 15 minutes. Season with salt and pepper sauce and serve hot.
