Carrot and potato stew with apples

Ingredients for 4 servings:

  • 2 onions
  • 3 tbsp olive oil
  • 800 g carrot(s)
  • ½ kg potatoes
  • ½ kg apples
  • 4 tbsp sour cream
  • 1 bunch of parsley
  • 1 liter vegetable broth
  • salt and pepper

Peel and dice the onions, and fry them in hot olive oil. Peel and dice the carrots and potatoes. Add both, fry briefly, and pour in 1 liter of vegetable stock. Season with salt and a little pepper and cook for 20 minutes. Meanwhile, peel and dice the apples. Add them after 20 minutes and cook for another 10 minutes. Add 4 tablespoons of sour cream and season again to taste. Finally, sprinkle with freshly chopped parsley and serve.
