Ingredients for 4 servings:
- 200 g lamb’s lettuce
- 2 onions, red
- 150 g mushrooms
- 1 bell pepper(s), red
- 8 cherry tomatoes
- 1 garlic clove(s)
- 2 tbsp vinegar
- 1 tsp mustard
- 1 pinch(s) of sugar
- 1 lemon(s), juice
- 4 tbsp olive oil
- e.g. salt and pepper
- some pumpkin seeds

Wash and trim the lamb’s lettuce. Peel the onions and slice them into rings. Trim and slice the mushrooms. Trim the bell peppers and cut them into small pieces. Wash and halve the cherry tomatoes. Combine all ingredients in a bowl and mix. For the dressing, peel and crush the garlic clove, then mix with the vinegar, mustard, sugar, lemon juice, and oil. Season with salt and pepper and pour over the salad. Finally, sprinkle some pumpkin seeds on top. It’s quick to make and good for the immune system.
