Carrot and zucchini fritters

Ingredients for 2 servings:

  • 150 g zucchini
  • 150 g carrot(s)
  • 300 g potatoes
  • 2 eggs
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Grate the carrots, potatoes, and zucchini and squeeze the liquid out of a kitchen towel. Mix everything with the eggs, season, and fry in a pan.
