Ingredients for 1 servings:

  • 200 g carrot(s), peeled
  • 100 g butter, liquid
  • 100 g brown sugar
  • 2 eggs
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp mace
  • 100 g walnuts, coarsely chopped
  • 100 g rye flour
  • 80 g wheat flour
  • 1 tsp baking powder

Working time approx. 30 minutes; Total time approx. 30 minutes

Finely grate the carrots. Cream the cooled, still-melted butter with the sugar and eggs until fluffy, then add the carrots, salt, cinnamon, and nutmeg and mix well. Finally, fold both types of flour, along with the baking powder and chopped walnuts, into the batter. Pour the batter into a greased loaf pan and bake in a preheated oven at 170°C for 45-55 minutes. For some, it’s a bread, for others, more of a cake—it’s always delicious! You don’t really need a topping, though apricot jam and honey work well.
