Carrot cake without sugar – ingredients

You can replace sugar with other sweet ingredients when baking. You will then need the following ingredients:

  • 300g carrots
  • 50g ground almonds
  • 250g hazelnuts
  • 6 eggs
  • 100g butter
  • 200g soft dates
  • half a lemon
  • a little cinnamon powder
  • a little ginger powder
  • the pulp of a quarter of a vanilla bean
  • 100g flour
  • 2 teaspoons baking soda
  • For the mold you need some butter to rub in and some breadcrumbs. This will make it easier to remove the cake from the mold later.

You will need the following materials for the cake:

  • grater
  • 3 large bowls
  • baking pan
  • hand blender/blender

Before preparing the dough, preheat the oven to 175 degrees for a fan oven.

  1. Using the grater, grate the carrots into fine pieces. In a large bowl, mix the carrots with the ground nuts.
  2. Separate the yolks from the whites of the eggs. Put the yolks in another bowl along with the dates. Puree both together to a creamy mass.
  3. Add the butter, lemon zest, cinnamon, ginger powder, and vanilla to the egg and date mixture.
  4. Pour the mixture into the bowl with the carrots and nuts.
  5. Beat the egg whites stiff.
  6. Mix the flour with the baking soda. Add both to the carrot mixture.
  7. Lift the beaten egg white underneath.
  8. Grease the baking pan with butter and sprinkle some breadcrumbs on top, especially around the edges.
  9. Pour the batter into the mold. Let everything bake on the middle shelf for 30 to 50 minutes. Depending on the oven, the baking time will vary.
