Ingredients for 4 servings:
- 100 g diced ham
- 1 large onion(s), diced
- 500 g carrot(s)
- 2 red bell peppers, diced
- 500 ml vegetable stock
- 250 ml soy cream (Soy Cream Cuisine)
- 1 tbsp paprika powder, sweet
- 1 tbsp smoked paprika powder
- pepper
- 2 tbsp parsley
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
without dairy products
Brown the ham cubes, then set aside. Sauté the diced onions and bell peppers, along with the trimmed and sliced carrots, in the rendered ham fat. Deglaze with the vegetable stock and simmer, covered, until the vegetables are tender. Then puree everything finely. Thin the vegetable purée with the soy cream and, if necessary, add a little water to achieve the desired consistency. Season with pepper and both types of paprika, then stir in the parsley. Finally, add the diced ham and serve. Goes well with pasta and meat or vegetable patties.
