Ingredients for 2 servings:

  • 375 g carrot(s), peeled
  • 200 ml water
  • 125 ml lime juice
  • 1 lime(s), zest
  • 500 g gelling sugar (2:1)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

extraordinary and delicious

Coarsely grate the peeled carrots and add them to a saucepan with the water. Cover and simmer over moderate heat for about 10 minutes. The water should evaporate. Add the lime juice, lime zest, and preserving sugar to the carrots. Stir, bringing to a boil and simmering for 5 minutes. Then, while still hot, pour into clean jars and seal immediately.
