Carrot pancakes

Ingredients for 4 servings:

  • 4 m.-sized carrot(s)
  • 3 large potatoes
  • 250 g oat flakes, fine
  • some salt
  • 1 jar applesauce
  • lots of fat for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Carrot pancakes with applesauce

Peel the potatoes and carrots and finely grate them using a fine grater. Mix the grated vegetables with the oats and salt. Knead the mixture thoroughly, pressing and squeezing it through your fingers until it forms a smooth dough. If it’s still too watery, add more oats. With wet hands, form small, approximately 10 cm balls, flatten them, and fry them in a pan with hot oil until golden brown on both sides. Arrange the carrot pancakes on plates and serve with applesauce.
