Carrot pancakes

Ingredients for 2 servings:

  • 250 g carrot(s)
  • 2 small potatoes
  • 50 g walnuts
  • 2 eggs
  • 2 tbsp flour
  • salt and pepper
  • oil
  • 100 g crème fraîche
  • 4 sprigs of dill

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Peel the carrots and coarsely grate them. Peel the potatoes and finely grate them. Roughly chop the walnuts. Mix the carrots, potatoes, and nuts with the eggs, flour, and a little salt and pepper. Heat a little oil in a pan, add a tablespoon of pancakes to each pancake, flatten them slightly, and fry until golden brown on both sides. Mix the crème fraîche with the dill and season with salt. Serve the finished pancakes with the dill cream.
