Ingredients for 2 servings:

  • 5 carrots
  • 2 eggs
  • 1 clove(s) garlic
  • 1 small onion(s)
  • 3 tbsp breadcrumbs
  • e.g. herbs (chives, parsley)
  • salt and pepper
  • Oil for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

vegetarian, delicious use of leftover carrots

Finely chop the carrots, onions, garlic, and any herbs (using a grater, food processor, or Tupperware Turbochef). Add the remaining ingredients and mix until a paste forms. If it’s a bit too wet or dry, add more egg or breadcrumbs as needed (this varies depending on the egg size). Add tablespoonfuls to the oil in a hot pan and fry until golden brown. Goes great with rice.
