Carrot – Raisin – Halwa

Ingredients for 4 servings:

  • 400 g carrot(s)
  • 4 tbsp clarified butter
  • 2 tbsp semolina (wheat semolina)
  • 3 tbsp raisins
  • 3 tbsp almond slivers or chopped almonds
  • 300 ml milk
  • 4 tbsp sugar
  • 1 tsp cardamom

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Indian dessert

Peel and finely grate the carrots. Heat 2 tablespoons of clarified butter in a saucepan and add the grated carrots. Cook over medium heat for about 20 minutes, stirring constantly. Meanwhile, heat the remaining clarified butter in a pan. Add the semolina and almonds and toast for about 5 minutes. Then remove from the heat. Wash the raisins and pat dry. In a large saucepan, bring the milk, sugar, and raisins to a boil. Stir in the grated carrots and semolina mixture and simmer over medium heat for 15 minutes, stirring constantly. The mixture should have a creamy consistency. If the halwa is too runny, add a little more semolina. Then stir in the cardamom, season with more sugar if desired, and mix everything well. Pour the carrot and raisin halwa into dessert bowls and refrigerate for about 1 hour.
