Ingredients for 5 servings:

  • 10 carrots
  • 1 orange(s), the juice
  • ½ lemon(s), the juice
  • 2 tbsp honey
  • 1 clove(s) garlic, crushed
  • ½ tsp cumin, ground
  • ½ tsp ginger, freshly grated
  • 1 tsp mustard
  • 4 tbsp olive oil, good
  • 1 bunch coriander greens, chopped
  • salt and pepper

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

from steamed carrots

Peel, wash, and slice the carrots. Steam for about 10 minutes. Combine the garlic, orange and lemon juice, honey, mustard, cumin, ginger, and olive oil. Toss the lukewarm carrots with the dressing and coriander. Season with salt and pepper. Let it chill for about 1 hour.
