Carrot salad with horseradish

Ingredients for 4 servings:

  • 500 g carrot(s)
  • 2 tbsp horseradish, grated
  • 3 tbsp apple cider vinegar
  • 4 tbsp olive oil
  • salt and pepper
  • Parsley

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Peel the carrots and cook them in boiling water until al dente. Let them cool, then coarsely grate them. Mix with the remaining ingredients and let them simmer for about 1 hour.
