Potato salad with cucumbers and radishes

Ingredients for 1 servings:

  • 300 g potatoes
  • ½ bunch radishes
  • 2 tbsp sour cream, 10% fat
  • 1 bunch of chives
  • ½ cucumber(s)
  • 50 ml water
  • ¼ tsp vegetable broth, instant
  • ½ tsp mustard
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 35 minutes

Boil the potatoes with their skins on, drain, and let cool. Peel and slice the potatoes. Slice the cucumber and radishes and mix everything together. Add the broth, cream, mustard, salt, and pepper. Chop the chives and add them. Let stand for 20 minutes and season again if necessary.
