Ingredients for 4 servings:

  • 1 large carrot(s)
  • 200 g sauerkraut, raw
  • ½ lemon(s), untreated
  • 2 tbsp oil (lemon oil tastes good)
  • 1 tsp honey
  • 1 pinch of nutmeg
  • 150 g sour cream
  • 1 tsp pepper, pickled green pepper (optional)
  • Salt
  • Sugar

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Grate the lemon zest and squeeze the lemon juice. Make a marinade with lemon juice, oil, honey, nutmeg, and a little grated lemon zest. Peel and coarsely grate the carrot. Mix the carrots and sauerkraut with the marinade. Season the sour cream with crushed pepper, salt, and sugar. Serve the salad and garnish each salad with a dollop of the sour cream mixture.
