Ingredients for 2 servings:
- 300 g carrot(s)
- 300 g potatoes
- 750 ml broth
- ½ bunch parsley
- ½ onion(s)
- oil
- pepper

vegan, quick and easy
Peel and finely chop the carrots, potatoes, and onions. Fry the onion in oil until translucent, then add the carrots and potatoes. Pour the broth over everything, using only 500 ml initially and adding more as needed. Then cook until the carrots and potatoes are tender. Mash some of the vegetables with a potato masher until the desired consistency is reached. Sprinkle with pepper and parsley. This also tastes good with mushrooms, and the onion can easily be replaced with spring onions.
