Vegan kale with curry

Ingredients for 2 servings:

  • 300 g kale
  • 5 m.-sized potatoes
  • 1 large onion(s)
  • 1 tbsp, leveled vegetable stock powder, instant
  • 2 tbsp, leveled curry powder
  • 1 tsp cinnamon

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes

If you love kale and want to avoid meat, but still want to eat really “spicy” kale, you can try this recipe.

Finely chop the onion and sauté in a little oil until translucent. Peel and dice the potatoes, and add them. Pour in enough water to cover the potatoes. Add the finely chopped and washed kale. Add the vegetable stock powder, curry powder, and cinnamon. Let it simmer for 30 minutes. Then season to taste. Since I always season by taste, the spice quantities are only approximate.
