Carrots – Ginger Soup Alla Thomas

- Vegetable oil
- 1 Pc. Chopped onion
- 30 g Chopped ginger
- 1 kg Carrots
- 0,5 liter Carrot juice with honey
- 0,5 liter Vegetable broth
- White milled pepper
- Salt
- 1 bunch Finely chopped coriander
- 1 a cup Sweet cream
- Peel the carrots and cut into large pieces.
- Sauté the onions with oil in a saucepan, after about a minute add the chopped ginger and continue steaming. After another minute, add the carrots and cook for another two to three minutes.
- Pour in the carrot juice and vegetable stock, bring to the boil, then set lower and slowly simmer until the carrots are soft.
- Then puree the contents of the pot with the hand blender so that small “remnants” of the carrots remain.
- Add the sweet cream and season with salt and pepper. If the soup is still too thick, add a little more stock.
- Stir in the chopped coriander and serve.
