Roasted Semolina Soup with Carrots, Apple and Ginger

Ingredients
 

  • 250 g Carrots
  • 1 Apple
  • 1 piece Fresh ginger
  • 1 small Onion
  • 10 tablespoon Durum wheat semolina
  • 1 liter Vegetable broth
  • Clarified butter
  • Salt, pepper, maple syrup

Instructions
 

  • Peel the carrots, apple, ginger and onion. Cut the carrots into small slices and the apple into sticks. Quarter the onion and cut into small slices. Chop the ginger into small cubes.
  • Melt the butter lard in a saucepan and lightly roast the onion slices and ginger cubes. Add the semolina and roast with constant stirring.
  • Deglaze with vegetable stock and add the carrot slices and apple sticks. Season with salt and pepper. Cook everything over medium heat. The semolina swells up and makes the soup creamy. If it gets too thick, thin it with vegetable stock. Finally, season to taste slightly sweet with maple syrup.
