Carsten's green asparagus salad

Ingredients for 4 servings:

  • 1 kg asparagus, green
  • 200 g pasta
  • 200 g Parma ham
  • 50 g Parmesan
  • olive oil
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

with pasta, Parma ham and Parmesan

Cook the pasta in salted water until al dente. Meanwhile, wash the asparagus and trim off the woody ends, then cut each spear into three or four bite-sized pieces, if possible of equal length. Cut the Parma ham into strips. Heat a pan with oil and fry the first 500g of asparagus in the pan until it is still firm to the bite, but the wonderful aroma of the asparagus can fully develop. Place the asparagus in a bowl and cover with 100g of Parma ham strips, 25g grated Parmesan cheese, and a generous splash of olive oil. Season with salt and pepper. Then add the pasta to the bowl. Fry the remaining asparagus in the pan and add it to the pasta. Then cover with the remaining ham strips, the remaining Parmesan cheese, another generous splash of olive oil, and a little more salt and pepper. Mix everything well and serve lukewarm. If you like, serve with a baguette and a light red wine.
